2-Ingredient Cottage Cheese Wraps 🧀

These wholesome wraps are incredibly simple to make, offering a healthy and satisfying alternative to traditional tortillas!

Ingredients
  

  • 1 cup full-fat cottage cheese drain any excess liquid if very watery
  • 2 large eggs

Optional Seasonings

  • a pinch garlic powder for added flavor
  • a pinch Italian seasoning for added flavor
  • a pinch salt for added flavor
  • a pinch pepper for added flavor
  • a pinch nutritional yeast for added flavor

Instructions
 

  • 1. Blend Smooth: Combine 1 cup of cottage cheese and 2 large eggs in a blender. Add any optional seasonings you like. Blend until the mixture is completely smooth and creamy, which usually takes about 20-30 seconds.
  • 2. Choose Your Method (Pan or Oven):
  • Pan Method (Quick & Crispy): Heat a small nonstick skillet (8-10 inches) over low to medium-low heat for at least 2 minutes. Lightly grease it with oil or cooking spray. Pour about 1/3 cup of batter into the center of the hot pan. Immediately tilt and swirl the pan to spread the batter into a thin, even circle, similar to a crepe. Cook undisturbed for 3-5 minutes until the top looks dry, the edges pull away easily, and a spatula can slide underneath without resistance. Gently flip and cook the other side for 1-2 minutes until golden and firm. Transfer to a plate and let cool for 2-3 minutes to become more pliable. Repeat with the remaining batter.
  • Oven Method (Hands-Off & Even): Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat. Pour the batter into three even circles (about 6-7 inches wide) on the prepared baking sheet. Use the back of a spoon or measuring cup to spread them into thin, even rounds. Bake for 18-20 minutes, or until the wraps are firm and the edges are lightly golden. Avoid overbaking. Remove from the oven and let cool on the baking sheet for 5 minutes before gently peeling them off.
  • 3. Enjoy Your Wraps: Once cooled, these flexible wraps are ready to be filled, rolled, or folded with your favorite healthy ingredients like scrambled eggs, avocado, turkey, hummus, or grilled veggies!

Notes

Store leftovers in the fridge between parchment paper for up to 5 days.
