Ingredients
  

  • 1 pound ground chicken
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ranch seasoning

Instructions
 

  • In a spacious mixing bowl, gently combine the ground chicken, shredded cheddar cheese, and ranch seasoning until well blended.
  • Warm a large non-stick pan over medium heat. No need for extra oil, as the non-stick surface will keep things easy and healthy!
  • Using a 2-tablespoon scoop (or a regular spoon), portion out the chicken mixture into the hot pan, making sure not to overcrowd it. You'll likely cook these in two batches, as the recipe makes about 12-13 fritters.
  • With a spatula, gently press each scoop flat to form a fritter shape.
  • Cook the fritters for a few minutes on the first side until they turn a lovely golden brown.
  • Flip them over and continue cooking for another 3-4 minutes until cooked through and golden on the second side. If they're browning too quickly, simply lower the heat a bit.
  • Transfer the cooked fritters to a plate. Serve warm with your favorite healthy dipping sauce for an extra burst of flavor!
