Ingredients
  

  • 1 pound ground chicken
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ranch seasoning mix

Instructions
 

  • First, in a large mixing bowl, gently combine the ground chicken, shredded cheddar cheese, and ranch seasoning mix until everything is well incorporated.
  • Next, heat a large non-stick skillet over medium heat. There's no need for extra oil thanks to your non-stick pan, keeping things light and healthy!
  • Using a 2-tablespoon scoop or a regular spoon, carefully drop portions of the chicken mixture into the hot pan, making sure not to overcrowd it. Gently flatten each scoop with a spatula to form a fritter shape.
  • You'll make about 12-13 fritters, so you'll likely need to cook them in two separate batches.
  • Cook the fritters on one side for a few minutes until they are beautifully golden brown and lightly crispy. Then, carefully flip them over and continue cooking for another 3-4 minutes, ensuring they are cooked through. If they start browning too quickly, just reduce the heat to medium-low.
  • Once cooked, transfer the fritters from the pan to a plate. Repeat the process with the remaining mixture.
  • Serve these easy and delicious fritters warm with your favorite light dipping sauce, if desired.
