  • 2.5 cups Wholesome Yum Blanched Almond Flour
  • 1 tablespoon Baking powder
  • 2 teaspoons Cinnamon
  • 0.5 teaspoon Sea salt
  • 0.33 cup Wholesome Yum Zero Sugar Honey Substitute (or regular honey/maple syrup)
  • 0.25 cup Unsalted butter melted
  • 3 large ripe Bananas mashed (about 1 1/2 cups)
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Walnuts chopped (divided into 3/4 cup and 1/4 cup)

Instructions
 

  • Get Ready: Preheat your oven to a cozy 350°F (176°C). Lightly line a 9x5 inch loaf pan with parchment paper, leaving some overhang for easy lifting later.
  • Mix Dry Goodness: In a medium bowl, whisk together the almond flour, baking powder, aromatic cinnamon, and a pinch of sea salt. Set aside.
  • Mash Those Bananas: In a separate small bowl, mash your ripe bananas until smooth and creamy.
  • Combine Wet Wonders: In a large mixing bowl, gently whisk the eggs until they're a bit frothy. Stir in the honey (or maple syrup!), melted butter, your mashed bananas, and a splash of vanilla extract until everything is nicely combined.
  • Bring it All Together: Pour the dry ingredient mix into the wet mixture. Stir gently until just barely combined – no need to overmix! Fold in 3/4 cup of the chopped walnuts for a delightful crunch.
  • Into the Pan: Carefully pour your delicious batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chopped walnuts evenly over the top for a beautiful finish.
  • Bake to Perfection: Pop the loaf into your preheated oven and bake for about 40-45 minutes, until the top turns a lovely golden brown. Then, loosely cover it with aluminum foil and continue baking for another 20-30 minutes, or until a toothpick inserted into the center comes out clean.
