Instructions
Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper for easy removal.
In a mixing bowl, mash the ripe bananas until smooth.
Add the eggs, honey (or maple syrup), and vanilla extract to the mashed bananas, and whisk until well combined.
In a separate bowl, mix together the almond flour, baking soda, baking powder, and salt.
Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Fold in walnuts or dark chocolate chips if desired.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
