Ingredients
  

Dough Ingredients

  • 2 cups all-purpose flour unbleached
  • 1/2 cup pecans finely ground
  • 2 tbsp evaporated cane sugar
  • 1/2 tsp sea salt
  • 12 tbsp unsalted butter cubed and chilled
  • 6-8 tbsp ice water

Filling & Decoration

  • 3 Granny Smith apples organic, cored and cut into 8 wedges each
  • 1/4 cup evaporated cane sugar
  • 1/2 tsp cinnamon
  • 8 dried cranberries organic, for eyes

Instructions
 

  • Make the dough: In a big bowl, whisk together the flour, ground pecans, 2 tablespoons sugar, and salt. Add the cold butter cubes and use your fingers to rub them into the flour until it looks like coarse crumbs. Stir in 5 tablespoons of ice water, then add more water a tablespoon at a time until the dough comes together. Pat into a rectangle, fold, and press 4 times. Wrap and chill for 30 minutes.
  • Roll and cut: On a floured surface, roll the dough to ⅛-inch thick. Use a pizza cutter to slice into thin strips. Chill strips for 10 minutes.
  • Preheat and prep: Heat oven to 350°F. Mix 1/4 cup sugar with cinnamon and toss apple wedges to coat.
  • Wrap the mummies: Wrap apple slices with dough strips. Place on parchment-lined sheet. Press cranberry pieces on for eyes.
  • Bake: Bake for 18-22 minutes until golden. Cool for 3 minutes before serving.
