Instructions
Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
In a big bowl, whisk together the flour, both sugars, baking powder, cinnamon, and salt.
In a separate bowl, whisk the oil, buttermilk, eggs, and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients. Stir gently until half combined.
Fold in the chopped apple pieces until just combined.
Divide the batter evenly among the prepared muffin cups.
For the topping: Whisk flour, sugars, cinnamon, and salt. Drizzle with melted butter and toss with a fork until crumbly. Sprinkle over muffins.
Bake for 24–25 minutes, until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
