Back-to-School Chicken Caesar Wraps

Ingredients
  

Filling

  • 4 cups romaine lettuce heart, chopped
  • 2.5 cups cooked diced or shredded chicken breast
  • 1/2 cup sun-dried tomatoes, chopped dry or oil-packed
  • 1/3 cup shredded Parmesan cheese
  • 1/3 cup Caesar dressing
  • 1 tsp Worcestershire sauce optional
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Wraps

  • 4 whole wheat wraps or large tortillas

Instructions
 

  • If your sun-dried tomatoes are dry-packed, soak them in hot water for a few minutes, then drain. If they are oil-packed, just pat them dry.
  • In a big bowl, stir the Caesar dressing and Worcestershire sauce together.
  • Add the chopped chicken, romaine, sun-dried tomatoes, Parmesan, salt, and pepper. Toss everything well to coat in the dressing.
  • Lay a tortilla flat on a clean surface. Spoon a quarter of the filling into the center of each wrap.
  • To wrap tightly, fold the two opposite sides inward, then roll it up snugly from one of the open ends. Slice in half if you like.
  • Enjoy right away, or wrap tightly in foil or plastic wrap for a lunchbox. It will stay fresh in the fridge for up to 4 hours.
