Back-to-School Choc-Banana Quinoa Pudding Pots

Ingredients
  

  • 1 1/2 cups white quinoa, rinsed and drained
  • 3 cups unsweetened low-fat coconut milk
  • 2 1/2 tbsp cocoa powder
  • 1/3 cup granulated sugar or caster sugar
  • 3 small bananas, sliced
  • 1 1/2 tbsp honey for drizzling

Instructions
 

  • In a medium saucepan over medium heat, combine the quinoa, coconut milk, cocoa powder, and sugar. Stir and bring to a gentle simmer.
  • Reduce the heat to low and cook uncovered for about 15 minutes, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed. Remove from heat and let it cool slightly.
  • Divide the quinoa mixture evenly among 6 half-cup (4 oz) airtight containers. Refrigerate until chilled and set.
  • When ready to pack in lunchboxes, top each pot with sliced banana and drizzle with honey right before serving.
