Equipment

  • Baking Sheets
  • Parchment Paper
  • Wire Rack

Ingredients

  • 80 g unsalted butter melted and cooled
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 large egg
  • 0.5 cup sultanas
  • 0.5 cup all-purpose flour
  • 0.5 cup self-rising flour
  • 0.5 tsp ground cinnamon
  • 0.5 tsp baking soda
  • 150 g dark chocolate broken into pieces

Instructions

  • Preheat your oven to 350°F (180°C). Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Beat in the egg and sultanas.
  • Sift the flours, cinnamon, and baking soda over the mixture. Stir gently until just combined. Let the dough rest for 10–15 minutes until firm.
  • Drop small spoonfuls of dough onto the prepared trays, leaving space for spreading. Bake for 12–15 minutes or until golden brown. Cool on the trays for 10 minutes, then transfer to a wire rack.
  • Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth. Spoon the melted chocolate into a small plastic bag, snip off a corner, and drizzle over each biscuit. Let set completely. Store in an airtight container.
