Ingredients
  

Dry Ingredients

  • 3 cups old fashioned oats
  • 1 1/2 cups chopped nuts walnuts or almonds

Syrup Base

  • 6 Tbsp unsalted butter
  • 1/2 cup dark brown sugar firmly packed
  • 1/3 cup honey
  • 1/2 tsp salt
  • 1 1/2 tsp pure vanilla extract
  • 1 cup mini chocolate chips divided

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper. Toast oats and nuts for 10 minutes, stir, then bake for another 5-7 minutes until golden. Transfer to a heatproof bowl.
  • In a medium saucepan, melt butter with brown sugar, honey, and salt over medium-low heat. Once dissolved, remove from heat and stir in vanilla extract.
  • Pour syrup over oat mixture and stir to coat. Cool for 10 minutes. Prepare a 9x9-inch pan with parchment paper.
  • Stir 2/3 cup chocolate chips into the cooled mixture. Press into the pan, then top with remaining 1/3 cup chips, pressing gently.
  • Chill in the refrigerator for 1-2 hours until firm. Lift out and cut into 10 bars.
