Equipment

  • Slow Cooker
  • Heavy-duty foil

Ingredients

  • 2 large eggs beaten
  • 3/4 cup quick-cooking oats
  • 1/2 cup ketchup
  • 1 envelope Lipton onion soup mix
  • 2 pounds ground beef 90/10 recommended

Instructions

  • Prepare your slow cooker by cutting three strips of heavy-duty foil and arranging them like spokes in the bottom of the cooker. Spray with cooking spray.
  • In a large bowl, whisk the eggs, oats, ketchup, and the onion soup mix together until well combined.
  • Gently crumble the ground beef over the mixture and use your hands to mix everything lightly—don't overwork it.
  • Shape the mixture into an oval loaf and place it in the center of the foil strips.
  • Cover and cook on low for 5 to 6 hours, or until a meat thermometer inserted in the center reads 160°F.
  • Using the foil strips as handles, lift the meatloaf out, let it rest for 10 minutes, then slice and serve.
