Ingredients
  

  • 6 large eggs
  • 1 tbsp Dijon mustard
  • 3/4 cup ham finely chopped (or smoked salmon)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onion finely chopped

Instructions
 

  • Preheat your oven to 400°F. Grease a mini muffin pan well with cooking spray.
  • In a big bowl, whisk the eggs and mustard until smooth.
  • In another bowl, stir together the chopped ham, shredded cheese, and green onion.
  • Divide this ham-cheese mixture evenly among the 24 mini muffin cups.
  • Pour the egg mixture over the top, filling each cup almost to the brim.
  • Bake for 15–18 minutes, until the egg bites are set and a toothpick comes out clean.
  • Let them cool for 5 minutes, then run a thin knife around the edges to loosen and pop them out.
  • Serve warm, or let them cool completely before packing into lunch boxes. Store in the fridge for up to 4 days or freeze for later.
