shredded cheddar cheese

Instructions
Preheat your oven to 400°F. Grease a mini muffin pan well with cooking spray.
In a big bowl, whisk the eggs and mustard until smooth.
In another bowl, stir together the chopped ham, shredded cheese, and green onion.
Divide this ham-cheese mixture evenly among the 24 mini muffin cups.
Pour the egg mixture over the top, filling each cup almost to the brim.
Bake for 15–18 minutes, until the egg bites are set and a toothpick comes out clean.
Let them cool for 5 minutes, then run a thin knife around the edges to loosen and pop them out.
Serve warm, or let them cool completely before packing into lunch boxes. Store in the fridge for up to 4 days or freeze for later.
