Back-to-School Oatmeal Energy Bars

- 2 cups rolled oats
- 1 cup unsweetened coconut flakes
- 1/3 cup raisins or chocolate chips or dried fruit
- 2 large ripe bananas
- 2 apples peeled and finely grated
- 1 tsp vanilla extract
- 1 tsp cinnamon optional
Preheat your oven to 350°F (180°C). Lightly butter an 8x8-inch baking pan and line it with parchment paper.
In a medium bowl, stir together the oats, coconut flakes, and raisins.
In a large bowl, mash the bananas until smooth. Stir in the grated apples, vanilla, and cinnamon (if using).
Add the oat mixture and mix until everything is well combined.
Spoon the mixture into the prepared pan and press it down evenly with the back of a spoon.
Bake for 30 minutes, until the edges are golden and slightly crisp.
Let the pan cool on a wire rack, then cut into 16 bars. Pack one in a lunch box for a healthy back-to-school treat!
