Back-to-School Oatmeal Energy Bars

Ingredients
  

  • 2 cups rolled oats
  • 1 cup unsweetened coconut flakes
  • 1/3 cup raisins or chocolate chips or dried fruit
  • 2 large ripe bananas
  • 2 apples peeled and finely grated
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional

Instructions
 

  • Preheat your oven to 350°F (180°C). Lightly butter an 8x8-inch baking pan and line it with parchment paper.
  • In a medium bowl, stir together the oats, coconut flakes, and raisins.
  • In a large bowl, mash the bananas until smooth. Stir in the grated apples, vanilla, and cinnamon (if using).
  • Add the oat mixture and mix until everything is well combined.
  • Spoon the mixture into the prepared pan and press it down evenly with the back of a spoon.
  • Bake for 30 minutes, until the edges are golden and slightly crisp.
  • Let the pan cool on a wire rack, then cut into 16 bars. Pack one in a lunch box for a healthy back-to-school treat!
