Back-to-School Pizza Muffins

Ingredients
  

Dough

  • 1 pound prepared pizza dough

Fillings & Toppings

  • 1 1/2 cup shredded mozzarella cheese divided
  • 1/2 tsp Italian seasoning
  • 1/2 cup pizza sauce
  • 2 tbsp black olives sliced
  • avocado oil cooking spray

Instructions
 

  • Preheat your oven to 375°F. Lightly spray a standard 12-cup muffin tin with avocado oil to prevent sticking.
  • Cut the pizza dough into 12 equal pieces. Take one piece and flatten it into a small circle.
  • Place 1 tablespoon of mozzarella cheese in the center of the dough circle, then sprinkle a pinch of Italian seasoning on top.
  • Pull the edges of the dough up and over the cheese, pinching firmly to seal it into a ball.
  • Set the filled dough ball into one muffin cup. Repeat with the remaining dough, cheese, and seasoning.
  • Spoon a small spoonful of pizza sauce over each dough ball, then top with the remaining mozzarella cheese and a few black olive slices.
  • Bake for 18–20 minutes, until the tops are golden brown and the dough is cooked through.
  • Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool slightly before serving.
