Equipment

  • Large skillet
  • 11x7-inch baking dish

Ingredients

Sauce Mixture

  • 10 oz green enchilada sauce
  • 3/4 cup salsa verde

Filling

  • 1 lb lean ground beef
  • 4 large flour tortillas (10-inch) warmed
  • 1 1/2 cups shredded cheddar cheese divided

Instructions

  • Preheat your oven to 375°F. In a small bowl, stir together the enchilada sauce and salsa verde until combined.
  • In a large skillet over medium heat, cook the ground beef for 8-10 minutes, breaking it into small crumbles as it cooks, until no longer pink. Drain any excess fat. Stir 1/2 cup of the sauce mixture into the cooked beef.
  • Spoon about 2/3 cup of the beef mixture down the center of each tortilla. Top each with 3 tablespoons of shredded cheese. Fold the bottom and sides of the tortilla over the filling, then roll it up tightly to form a burrito.
  • Place the filled burritos seam-side down in a greased 11x7-inch baking dish. Pour the remaining sauce evenly over the tops. Sprinkle with the remaining 3/4 cup cheese. Bake uncovered for 10-15 minutes, just until the cheese is melted and bubbly. Let cool slightly before packing into lunch boxes.
