Instructions
Begin by preparing your Keto Thousand Island Dressing, making sure to stir in the smoked paprika. Set it aside to allow the flavors to deepen.
Next, chop the bacon into small pieces and cook it in a large skillet until it's wonderfully crisp. Remove the cooked bacon and most of the rendered grease, leaving just about two tablespoons in the pan.
Add the sliced mushrooms and diced onions to the skillet and sauté them gently until they become tender. Take them out of the skillet and set them aside.
Preheat your oven to a cozy 375°F (190°C).
Now, place the ground beef into the same skillet, season it with salt and black pepper, and cook until it's nicely browned. Stir in the minced garlic for just about 15 seconds, being careful not to let it brown.
Transfer the cooked ground beef and garlic to a large mixing bowl. Add the chopped pickles, half of the shredded cheddar cheese, most of your crispy bacon (remember to save a little for a garnish!), and the sautéed mushrooms and onions.
In a separate bowl, whisk together half of your prepared Thousand Island dressing, yellow mustard, beaten eggs, Worcestershire sauce, and heavy cream until everything is smoothly combined.
Pour this creamy mixture over the ground beef ingredients in the large bowl and mix gently until all components are evenly coated.
Pour the entire mixture into a 9x13-inch casserole dish that you've lightly sprayed with nonstick spray. Sprinkle the remaining shredded cheddar cheese evenly over the top.
Bake for 25-30 minutes, or until the casserole is thoroughly cooked and the cheese is beautifully melted and bubbly.
