Get your grill ready by preheating it to a medium-high temperature.
Carefully slice your salmon fillet into 16 equal, bite-sized cubes (around ½ ounce each). Then, cut each bacon strip in half.
Take one salmon cube and gently wrap it with half a strip of bacon. Secure it firmly with a toothpick. Repeat for all pieces.
Lightly season all the wrapped bites with black pepper.
For a healthier cook and to avoid flare-ups, turn off one of your grill burners. Place your salmon bites directly over the burner that is *off*. This indirect heat method is great for preventing grease fires!
