Ingredients
  

  • 4 skinless, boneless chicken breasts thinner cut
  • Salt to taste
  • black pepper to taste
  • 1 cup low-sugar BBQ sauce
  • 1 cup pineapple diced
  • 6 strips cooked bacon diced
  • 0.25 red onion thinly sliced
  • 1 cup shredded Mozzarella cheese
  • 0.5 cup pineapple diced (for garnish)
  • Green onion diced (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly spray a baking dish with oil.
  • Arrange the thinner chicken breasts in the prepared dish. Season generously with salt and black pepper.
  • Spoon the low-sugar BBQ sauce over each chicken breast, ensuring they are well coated.
  • Evenly sprinkle the 1 cup of diced pineapple over the sauced chicken.
  • Next, scatter the diced cooked bacon and thinly sliced red onion over the pineapple layer.
  • Finally, top with the shredded Mozzarella cheese. Bake for 25-30 minutes, or until the chicken is thoroughly cooked through.
  • For a perfectly golden and crispy cheese topping, broil for an additional 3-4 minutes. Before serving, garnish with the reserved diced pineapple and fresh green onions.
