Ingredients
  

For the Dressing

  • 0.5 cup rice vinegar
  • 0.33 cup avocado oil
  • 1-2 tablespoons sweetener (of choice)
  • 1 teaspoon salt
  • 1 clove garlic pressed
  • 1 small red onion quartered lengthwise, thinly sliced

For the Salad Base

  • 4 cups shredded cooked chicken preferably thighs
  • 16 oz shredded cabbage or coleslaw mix
  • 1 seedless cucumber thinly sliced into small spears
  • 1 jalapeno halved lengthwise, seeds removed, thinly sliced
  • 1 cup fresh basil chopped
  • 1 cup fresh cilantro chopped
  • 1.5 cups roasted salted peanuts roughly chopped
  • lime wedges to serve

Optional Creamy Topping

  • 2 tablespoons mayo optional, for creamy topping
  • 1 teaspoon lime juice optional, for creamy topping
  • 0.25 teaspoon garlic salt optional, for creamy topping

Instructions
 

  • Prepare the Dressing: In a small bowl, whisk together the rice vinegar, avocado oil, sweetener, salt, pressed garlic, and thinly sliced red onion. Let this vibrant dressing sit for about 10 minutes to allow the onion to soften and the flavors to beautifully meld.
  • Assemble the Salad Base: In a large mixing bowl, combine the shredded cooked chicken, crisp shredded cabbage, refreshing sliced cucumber spears, and the thinly sliced jalapeno. Add the fresh chopped basil and cilantro to this colorful mix.
  • Dress the Salad: Pour the prepared dressing, including the softened red onions, evenly over the chicken and vegetable mixture.
  • Add Peanuts & Toss: Sprinkle in half of the roughly chopped peanuts. Gently toss all the ingredients together until everything is well combined and coated in the delicious dressing.
  • Serve: Dish out the Banh Mi Salad into bowls. Garnish each portion with the remaining chopped peanuts and a fresh lime wedge on the side for an extra zesty squeeze of citrus. If desired, combine the optional mayo, lime juice, and garlic salt for a quick creamy topping to drizzle over individual servings.
