Skillet Base

  • 1 pound lean ground beef
  • 1/2 medium onion chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 can black beans 14 ounce, drained and rinsed
  • 1 jar salsa 14.5 ounce, your favorite kind
  • 4 medium flour tortillas cut into quarters
  • 1 cup shredded Mexican cheese blend

Optional Toppings

  • light sour cream
  • chopped scallions
  • fresh cilantro
  • sliced avocado

Instructions
 

  • In a large skillet, brown the lean ground beef and chopped onion over medium-high heat. Break up the meat with a spoon. Once it's partly cooked, stir in the garlic powder, onion powder, smoked paprika, ground cumin, and chili powder. Cook for 8-10 minutes until the beef is fully browned. Drain any excess fat for a healthier meal.
  • While the beef cooks, preheat your oven broiler to high. Position the oven rack in the top third of the oven.
  • Reduce the stove heat to medium. Add the drained black beans, salsa, and quartered tortillas to the skillet. Gently toss everything together until the tortillas are well distributed. Heat for a few minutes until warmed through.
  • Sprinkle the shredded cheese evenly over the top of the skillet mixture. Carefully transfer the skillet to the preheated broiler. Broil for just a few minutes, watching closely, until the cheese is melted, bubbly, and lightly golden.
  • Remove from the oven and serve immediately with your favorite healthy toppings like fresh cilantro, avocado, or a dollop of light sour cream. Season with a pinch of salt and pepper if desired. Enjoy this quick and flavorful meal!
