Berry French Toast Roll-Ups

Ingredients
  

  • 1/2 cup mascarpone cheese from 8-oz container
  • 1/4 cup sugar
  • 1 tsp ground cinnamon
  • 2 eggs
  • 1/4 cup milk
  • 8 slices soft multigrain bread crusts removed
  • 1 to 1 1/2 cups fresh raspberries
  • 3 tbsp butter
  • additional raspberries for garnish
  • mint leaves for garnish
  • maple syrup if desired

Instructions
 

  • In a small bowl, blend the mascarpone cheese with 1 tablespoon of sugar using an electric mixer until smooth.
  • In another bowl, combine the remaining sugar and cinnamon; set aside.
  • In a shallow dish, whisk together the eggs and milk until mixed well.
  • Flatten each slice of bread with a rolling pin to about 1/4 inch thick.
  • Spread 1 tablespoon of the cheese mixture on each slice, then place 4 to 6 raspberries along one edge and roll tightly.
  • Dip each roll-up into the egg mixture.
  • In a nonstick skillet, melt 2 tablespoons of butter over medium heat.
  • Add 4 roll-ups, seam side down, and cook for 2 to 4 minutes, turning until golden brown.
  • Roll in the cinnamon-sugar mixture.
  • Repeat with the remaining butter and roll-ups.
  • Garnish with extra raspberries and mint leaves, and serve with syrup.

Notes

Feel free to adjust the amount of raspberries and toppings to your liking!
