Ingredients

mascarpone cheese
from 8-oz container

sugar

soft multigrain bread
crusts removed
1 to 1 1/2

fresh raspberries

Instructions
In a small bowl, blend the mascarpone cheese with 1 tablespoon of sugar using an electric mixer until smooth.
In another bowl, combine the remaining sugar and cinnamon; set aside.
In a shallow dish, whisk together the eggs and milk until mixed well.
Flatten each slice of bread with a rolling pin to about 1/4 inch thick.
Spread 1 tablespoon of the cheese mixture on each slice, then place 4 to 6 raspberries along one edge and roll tightly.
Dip each roll-up into the egg mixture.
In a nonstick skillet, melt 2 tablespoons of butter over medium heat.
Add 4 roll-ups, seam side down, and cook for 2 to 4 minutes, turning until golden brown.
Roll in the cinnamon-sugar mixture.
Repeat with the remaining butter and roll-ups.
Garnish with extra raspberries and mint leaves, and serve with syrup.
Notes
Feel free to adjust the amount of raspberries and toppings to your liking!
