- 1 pkg potato gnocchi (16-oz.)
- 2 large eggs
- 2/3 cup Italian-style bread crumbs
- 1/3 cup Pecorino Romano grated, plus more for topping
- 3 Tbsp all-purpose flour
- Olive oil cooking spray
- Fresh parsley finely chopped
- Marinara sauce warmed, for dipping
Bring a large pot of salted water to a boil. Cook gnocchi according to package directions until al dente. Drain, rinse with cold water, and drain again. Spread on a baking sheet and cool for 5 minutes.
In a shallow bowl, whisk eggs with a pinch of salt and pepper. In another shallow bowl, combine bread crumbs and Pecorino.
Sprinkle flour over the cooled gnocchi, toss to coat, then season lightly with salt and pepper.
Preheat your air fryer to 375°F (190°C). Working in batches, dip gnocchi into the egg mixture, letting excess drip off, then coat in the bread crumb mixture. Place in a single layer in the air fryer basket.
Lightly spray the gnocchi with olive oil cooking spray. Air fry for 8–10 minutes, shaking the basket halfway through, until golden and crispy.
Transfer to a platter. Sprinkle with extra Pecorino and fresh parsley. Serve warm with marinara sauce.
