These delicious Lobster Mac & Cheese Bites are the perfect easy and healthy appetizer for your next Labor Day gathering. A gourmet twist on a classic comfort food!
Preheat oven to 400°F. Lightly spray a 24-cup mini muffin tin with cooking spray.
Bring a large pot of salted water to a boil. Cook pasta until very al dente (about 5–6 minutes) – it will finish cooking in the oven. Drain.
Meanwhile, in a large skillet over medium heat, melt 2 tablespoons butter. Sauté shallot and garlic until fragrant and shallots are soft (about 3 minutes). Whisk in flour and cook, stirring, for 1 minute until bubbly and light brown. Reduce heat to medium-low, pour in heavy cream, and stir until thickened (about 3 minutes).
Remove skillet from heat. Stir in cream cheese, gouda, and cheddar until smooth. Season with salt. Gently fold in cooked pasta and chopped lobster.
In a small skillet over medium heat, melt the remaining 1 teaspoon butter. Add bread crumbs and stir until golden and fragrant. Remove from heat.
Using two small spoons or a mini cookie scoop, divide the pasta mixture evenly among the prepared muffin cups. Sprinkle bread crumbs on top.
Bake for 20–25 minutes until golden brown and bubbly. Garnish with chives and a grind of black pepper. Let cool slightly before serving.
