Ingredients
  

Fruit Filling

  • 2 cups fresh blueberries
  • 2 1/2 cups peeled and sliced peaches about 5-6 medium peaches
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp vanilla extract
  • 1/2 cup granulated sugar for filling
  • 1/4 cup all-purpose flour for filling

Oat Topping

  • 1/2 cup all-purpose flour for topping
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar for topping
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 6 tbsp cold butter diced

Instructions
 

  • Preheat your oven to 350°F.
  • In a large bowl, gently toss together your fresh blueberries, juicy peach slices, lemon juice, lemon zest, vanilla extract, 1/2 cup of granulated sugar, and 1/4 cup of flour. Let this mixture rest for a few minutes so the fruits can release their natural, sweet juices.
  • In a separate bowl, whisk together the remaining flour, wholesome old-fashioned oats, brown sugar, remaining granulated sugar, salt, and cinnamon. Use your fingers to quickly work the cold, diced butter into the mixture until it comes together into lovely, rustic crumbles.
  • Pour your vibrant fruit mixture into a 2-quart baking dish or a cast-iron skillet, and scatter the oat crumble evenly over the top.
  • Place your baking dish on a cookie sheet to catch any bubbly juices. Bake for 40 to 45 minutes until the fruit is bubbling and the oat topping is beautifully golden and crisp. Serve warm and enjoy!
