Ingredients
  

  • 1 1/4 cups rye flour or whole wheat pastry flour
  • 1 1/3 cups semola flour (fine durum wheat)
  • 1 large egg whisked
  • 3 tablespoons fresh red beet juice
  • 1/3 to 1/2 cup water (as needed)

Instructions
 

  • In a large bowl (or right on your clean counter), mix your rye or whole wheat flour and semola flour. Make a well in the center and pour in your whisked egg. Gently work the egg into the flour, then add the vibrant beet juice and mix until it's all happy and combined.
  • Slowly drizzle in the water, just a splash at a time, until your dough comes together into a slightly firm ball. If you started in a bowl, turn it out onto your counter.
  • Knead the dough for about 7-10 minutes, pushing, pulling, and folding. You'll know it's ready when it feels smooth, silky, and elastic.
  • Wrap your dough tightly in plastic wrap or pop it in a sandwich bag and let it rest for at least 30 minutes. This nap time helps the gluten relax, making it easier to roll.
  • Lightly flour your work surface and your hands. Grab your rested dough and either roll it out super thin with a rolling pin (keep adding a sprinkle of flour to prevent sticking) or run it through your pasta machine. If using a machine, I like to go to setting '3' on an Atlas for that perfect thickness.
  • Once rolled out, you have two options for cutting: you can gently fold or roll your dough sheet into a loose cylinder and slice it into beautiful fettuccine strips with a sharp knife, or simply use the fettuccine cutter attachment on your pasta machine. Remember to keep the cut pasta lightly floured so it doesn't stick together.
  • Bring a large pot of well-salted water to a rolling boil. Carefully add your fresh beet fettuccine. These cook super fast – just about 1 minute! They'll float to the top when they're done.
  • Drain them quickly and gently. Now, they're ready to be tossed with your favorite light sauce or added to a warm, comforting broth. Enjoy your homemade, healthy, and incredibly beautiful pasta creation!
