  • 1 tablespoon unsalted butter softened
  • granulated sugar
  • 1 large egg
  • ¾ teaspoon vanilla extract
  • ½ cup buttermilk
  • ¾ cup cake flour
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 12-15 fresh strawberries about 1 cup pureed

Glaze

  • powdered sugar for glaze
  • 1-2 tablespoons milk for glaze

Instructions
 

  • Get Ready to Bake: Start by preheating your oven to 400°F (200°C). While it's heating, grab your freshest strawberries, trim off the green tops, and pop them into a food processor. Pulse them until you have a chunky puree – we want that real berry texture! Set this lovely puree aside.
  • Mix the Wet Goodness: In a large mixing bowl, combine your softened butter, sugar, and egg. Beat them together on medium-high speed for about 2 minutes until they're light and well blended. Now, stir in your vanilla extract, creamy buttermilk, and that vibrant strawberry puree until everything is beautifully combined.
  • Combine Dry & Wet: Gently add both the cake flour, all-purpose flour, baking soda, baking powder, and salt to your wet mixture. Turn your mixer to a low speed and mix just until everything is incorporated. Be careful not to overmix; that's the secret to light, fluffy donuts! Scrape down the sides of the bowl if needed.
  • Pipe & Bake: Scoop your donut batter into a large piping bag (or a sturdy freezer bag with a corner snipped off). Make sure your donut pan is lightly greased to prevent sticking. Carefully squeeze the batter into each donut mold, filling them about halfway. Bake for a quick 7-8 minutes on the middle oven rack until they're lightly golden and spring back to the touch.
  • Glaze & Enjoy: While the donuts cool slightly on a wire rack, whisk together some powdered sugar with 1-2 tablespoons of milk until you have a smooth, pourable glaze. Drizzle this delightful glaze over your warm donuts, or dip each donut top for a thicker coating. Let the glaze set for about 20-30 minutes before serving these healthy, homemade treats!
