12ouncesgood quality white chocolatefinely chopped
1teaspoonvanilla bean paste(or 1/2 teaspoon pure vanilla extract)
1/8teaspoonkosher salt
a few dropspink gel food coloring(for the drink or a light topping)
light whipped cream or a simple meringue toppingfor garnish
Instructions
Warm the Base: In a medium-sized saucepan, gently combine the milk, finely chopped white chocolate, vanilla bean paste (or extract), and kosher salt.
Melt and Whisk: Place the saucepan over medium heat. Whisk continuously until the white chocolate completely melts and the mixture becomes hot and wonderfully smooth. This usually takes about 6 to 8 minutes. Make sure the mixture doesn't come to a boil.
Serve & Garnish: Carefully pour the warm, comforting white hot chocolate into your favorite mugs. For an extra special Valentine's touch, you can add a tiny drop of pink food coloring directly into each mug and gently swirl it, or, if using a light whipped cream/meringue topping, add a few drops of food coloring to it, swirl just once or twice for a marbled effect, and then dollop generously on top of your hot chocolate.
