- 1/3 cup water
- 1/8 tsp cream of tartar
- 1 1/2 cups light brown sugar packed
- 3 oz butter (6 tablespoons)
- 3/4 cup heavy cream
- 1 tsp vanilla extract
- 1 tsp salt
Dissolve the cream of tartar in the water.
In a medium saucepan over medium-low heat, combine the light brown sugar and the water mixture.
Stir until boiling, then cook undisturbed for 8-10 minutes until it reaches a deep amber color with wisps of smoke.
Brush the sides of the pan to prevent sugar crystals.
Remove from heat and mix in the butter.
Gradually stir in the cream, vanilla, and salt.
Return to heat and boil for another 4-5 minutes.
Strain the caramel through a fine mesh sieve into a container, cool completely, and enjoy.
