Ingredients
  

  • 1/3 cup water
  • 1/8 tsp cream of tartar
  • 1 1/2 cups light brown sugar packed
  • 3 oz butter (6 tablespoons)
  • 3/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp salt

Instructions
 

  • Dissolve the cream of tartar in the water.
  • In a medium saucepan over medium-low heat, combine the light brown sugar and the water mixture.
  • Stir until boiling, then cook undisturbed for 8-10 minutes until it reaches a deep amber color with wisps of smoke.
  • Brush the sides of the pan to prevent sugar crystals.
  • Remove from heat and mix in the butter.
  • Gradually stir in the cream, vanilla, and salt.
  • Return to heat and boil for another 4-5 minutes.
  • Strain the caramel through a fine mesh sieve into a container, cool completely, and enjoy.
