Ingredients
  

  • 1 cup walnuts raw
  • 1/4 cup coconut flour fine, unsweetened
  • 8 tablespoons unsalted butter softened, cut into pieces
  • 1/2 cup low-carb sugar substitute like erythritol
  • 1 teaspoon ground nutmeg freshly ground for best flavor
  • 1 teaspoon vanilla extract pure, for a rich aroma

Instructions
 

  • Get Ready: Preheat your oven to 325°F (160°C). Line two baking sheets with parchment paper – this makes cleanup a breeze!
  • Grind Walnuts: Pop the walnuts into your food processor and pulse until they're finely ground. Be careful not to over-process into butter.
  • Combine Dry: Add the coconut flour, low-carb sugar substitute, nutmeg, and vanilla extract to the food processor. Process everything together until well combined.
  • Add Butter & Dough Up: Drop in the softened butter chunks. Pulse the mixture until it forms a soft, cohesive dough. It should be easy to handle!
  • Scoop & Shape: Using a cookie scooper (about 1 tablespoon size), scoop out 16 balls of dough onto your prepared baking sheets. Gently flatten each cookie with your hands.
  • Bake Away: Bake for 13 minutes. Your kitchen will smell amazing!
  • Cool & Enjoy: Once out of the oven, you can sprinkle a little extra nutmeg on top if you like. This is crucial: let them cool on the baking sheets for at least 20 minutes before moving them. They'll firm up beautifully! Then, dig in!
