Caprese Chicken

- 4 pieces chicken breasts 5-7 oz each, pounded to even thickness
- 2 tsp Italian seasoning
- 2 tsp sea or kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cracked black pepper
- 1 tbsp olive oil
- 8 oz fresh mozzarella sliced into 8 pieces
- 2 pieces vine-ripened tomatoes sliced into 1/2" slices
- fresh basil to taste
- aged balsamic or balsamic glaze to taste
Start by placing a chicken breast on parchment paper, fold it over, and pound to an even thickness of just under 1 inch. Repeat for all breasts.
In a small bowl, mix the Italian seasoning, sea salt, garlic powder, onion powder, and pepper.
Brush olive oil on the chicken, then sprinkle the seasoning mix on both sides.
Preheat a grill or grill pan on high heat. Grill the chicken for 5-6 minutes per side until the internal temperature reaches 155°F.
Top each breast with 2 slices of mozzarella and grill for an additional 3 minutes until melted and the temperature hits 165°F.
Transfer the chicken to a platter, add tomato slices, sprinkle with fresh basil, and season to taste. Drizzle with balsamic just before serving. Enjoy!
