Ingredients
  

  • 2 pounds ground chicken
  • 8 ounces sharp cheddar cheese grated
  • 0.5 cup almond flour
  • 1 egg large
  • 3 cloves garlic minced
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 1.5 tablespoons butter

Instructions
 

  • Line a large baking sheet with parchment paper.
  • In a spacious mixing bowl, gently combine the ground chicken, grated sharp cheddar cheese, almond flour, egg, minced garlic, dried parsley, salt, black pepper, and red pepper flakes. Mix everything with your hands until it's just blended – be careful not to overmix!
  • Scoop about 2 tablespoons of the mixture for each fritter and gently shape them into small, flat patties, roughly 2.5 to 3 inches wide. Arrange them neatly on your prepared baking sheet and pop them into the refrigerator to chill for at least an hour; this helps them firm up perfectly for cooking.
  • Heat 1 tablespoon of olive oil and ½ tablespoon of butter in a large skillet over medium heat. Once the pan is hot and the butter is shimmering, add 8 to 10 of your chicken fritters, making sure they have enough space. Cook them for about 3 minutes on each side until they're beautifully golden brown and fully cooked through.
  • Transfer the finished fritters to a plate lined with paper towels to soak up any excess oil. Repeat this process with the remaining fritters, adding a little more oil and butter to the skillet as needed. (A little tip: you might want to gently scrape any crispy, baked-on cheese from the pan between batches to prevent it from burning.)
