Ingredients
  

  • 6 ounces Zucchini shredded
  • 3/4 cup Cottage cheese 2% recommended
  • 2 large Eggs at room temperature
  • 1 cup Einkorn flour
  • 3/4 cup Blanched Almond Flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Sea salt
  • 3/4 cup Mexican blend cheese shredded

Instructions
 

  • Preheat your oven to 350°F (176°C) and line 10 muffin cups in a muffin tin with parchment paper liners.
  • Shred the zucchini using a food processor with a grating attachment or a regular box grater. Transfer the shredded zucchini to a large bowl and set it aside. No need to squeeze out all the moisture; it helps keep the muffins soft!
  • In your food processor (using the knife blade attachment), combine the cottage cheese and eggs. Blend until the mixture is smooth and creamy.
  • Now, add the einkorn flour, almond flour, baking powder, and sea salt to the food processor. Blend again until the batter is smooth, scraping down the sides as needed.
  • Scoop this thick batter into the bowl with your shredded zucchini. Stir in the shredded Mexican blend cheese. Gently fold all the ingredients together until they are evenly mixed.
  • Evenly scoop the batter into your prepared muffin cups, filling each one almost to the top for nice, full muffins.
  • Bake the cottage cheese muffins for 25-30 minutes, or until they are golden brown on top and a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and let them cool in the pan for about 5-10 minutes before carefully taking them out. Enjoy them warm, or let them cool completely for a firmer, meal-preppable texture.
