- 3/4 cup Cottage cheese 2% recommended
- 2 large Eggs at room temperature
- 1 cup Einkorn flour
- 3/4 cup Blanched Almond Flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Sea salt
- 3/4 cup Mexican blend cheese shredded
Preheat your oven to 350°F (176°C) and line 10 muffin cups in a muffin tin with parchment paper liners.
Shred the zucchini using a food processor with a grating attachment or a regular box grater. Transfer the shredded zucchini to a large bowl and set it aside. No need to squeeze out all the moisture; it helps keep the muffins soft!
In your food processor (using the knife blade attachment), combine the cottage cheese and eggs. Blend until the mixture is smooth and creamy.
Now, add the einkorn flour, almond flour, baking powder, and sea salt to the food processor. Blend again until the batter is smooth, scraping down the sides as needed.
Scoop this thick batter into the bowl with your shredded zucchini. Stir in the shredded Mexican blend cheese. Gently fold all the ingredients together until they are evenly mixed.
