Chicken, Bacon and Ranch Quesadillas

Ingredients
  

  • 1 cup chopped, cooked chicken heaping
  • 4 slices bacon cooked and crumbled
  • 2-3 tbsp Ranch dressing
  • 1 tbsp canned diced green chiles or jalapenos
  • 1.5 cups shredded Mexican cheese
  • 4 8-inch flour tortillas
  • 2 tbsp butter

  • salsa for serving
  • cilantro for serving

Instructions
 

  • In a medium bowl, combine the chicken, bacon, Ranch dressing, and green chiles.
  • For each quesadilla, lay one tortilla flat. Sprinkle 1/3 cup of cheese on top, add half the chicken mixture, and then another 1/3 cup of cheese. Place a second tortilla on top.
  • Heat 1 tablespoon of butter in a nonstick pan over medium heat. Add the quesadilla and cook until the bottom is golden brown, then flip and cook until the cheese melts.
  • Repeat with the second quesadilla. Cut into quarters and serve with extra ranch, salsa, and cilantro if desired.
