Lay a tortilla on a flat surface and generously sprinkle with cheese. Add shredded chicken, crumbled bacon, green onions (if desired), and drizzle ranch dressing. Top with more cheese and place another tortilla on top. Butter the top tortilla.
In a large skillet, heat butter over medium. Once melted, swirl to coat the pan and add the quesadilla, unbuttered side down.
Cook for 2-4 minutes until golden and crispy, then flip and cook for another 2-3 minutes until the cheese is fully melted and the tortilla is golden.
Repeat with remaining ingredients. Serve with extra ranch dressing, sour cream, or guacamole.
