Ingredients
  

  • 2 pieces cooked and shredded chicken breasts
  • 2 pieces bell peppers seeded and sliced
  • 1 large onion sliced
  • 1 package cream cheese at room temperature
  • 1 packet fajita seasoning
  • 1 tablespoon olive oil
  • 8 ounces Monterey Jack cheese shredded

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly coat a 9x13-inch casserole dish with non-stick cooking spray.
  • In a non-stick skillet over medium-high heat, drizzle olive oil.
  • Add the cooked chicken, bell peppers, and onion. Sauté for 1-2 minutes to sear the ingredients. Remove from heat.
  • In the same skillet, combine cream cheese and fajita seasoning until melted. Return the chicken and veggies to the skillet, mixing well to coat.
  • Transfer the mixture to the casserole dish and sprinkle with shredded cheese.
  • Bake for 20 minutes or until the cheese is golden and bubbly.
