Instructions
Preheat your oven to 350°F (175°C).
Lightly coat a 9x13-inch casserole dish with non-stick cooking spray.
In a non-stick skillet over medium-high heat, drizzle olive oil.
Add the cooked chicken, bell peppers, and onion. Sauté for 1-2 minutes to sear the ingredients. Remove from heat.
In the same skillet, combine cream cheese and fajita seasoning until melted. Return the chicken and veggies to the skillet, mixing well to coat.
Transfer the mixture to the casserole dish and sprinkle with shredded cheese.
Bake for 20 minutes or until the cheese is golden and bubbly.
