  • 2 lbs chicken breasts sliced into 8 thin cutlets
  • 3/4 cup crushed pork rinds for a crispy, low-carb coating!
  • 3/4 cup grated Parmesan cheese
  • 1/3 cup heavy cream
  • 1 large egg whisked
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Olive oil for pan-frying

  • Prepare the Chicken: Carefully slice your chicken breasts horizontally to create 8 thin cutlets. This helps them cook quickly and evenly!
  • Set Up Your Breading Stations: Grab two shallow dishes. In the first dish, whisk together the egg and heavy cream. In the second dish, mix the crushed pork rinds, Parmesan cheese, salt, and pepper. These will be your healthy, crispy coating!
  • Coat the Chicken: Take each chicken cutlet, dip it first into the egg-cream mixture, ensuring it's fully coated. Then, transfer it to the pork rind mixture, pressing gently to make sure the coating sticks well to all sides.
  • Pan-Fry to Golden Perfection: Heat a touch of olive oil in a large skillet over medium heat. Once warm, carefully place your coated chicken cutlets in the pan. Let them cook undisturbed for about 4-6 minutes per side, until they're beautifully golden brown and cooked through.
