- 4 Medjool dates
- 2-4 teaspoons peanut butter
- 1 tablespoon crushed peanuts
- 1/3 cup dark chocolate chips
- 1/2 teaspoon coconut oil optional
- coarse flaky sea salt a pinch
Gently slice each date lengthwise and carefully remove the pit, creating a little pocket for the filling.
Fill each date pocket with about ½ teaspoon of your favorite peanut butter, then sprinkle a few crushed peanuts on top.
In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second bursts, stirring until smooth and glossy. You can also use a double boiler.
Carefully dip each stuffed date into the melted chocolate, making sure it's fully coated. Let any extra chocolate drip off, then place them on a parchment-lined baking sheet.
While the chocolate is still wet, sprinkle a tiny pinch of flaky sea salt on top for that perfect sweet and salty balance.
