Chilled Chocolate Peanut Butter Date Bites 🌴

These delightful no-bake bites are a perfect combination of sweet Medjool dates, creamy peanut butter, crunchy peanuts, and a rich dark chocolate coating, finished with a pinch of flaky sea salt. A quick and healthy treat, ideal for summer or any time you need a sweet snack.

Ingredients
  

  • 4 Medjool dates
  • 2-4 teaspoons peanut butter
  • 1 tablespoon crushed peanuts
  • 1/3 cup dark chocolate chips
  • 1/2 teaspoon coconut oil optional
  • coarse flaky sea salt a pinch

Instructions
 

  • Gently slice each date lengthwise and carefully remove the pit, creating a little pocket for the filling.
  • Fill each date pocket with about ½ teaspoon of your favorite peanut butter, then sprinkle a few crushed peanuts on top.
  • In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second bursts, stirring until smooth and glossy. You can also use a double boiler.
  • Carefully dip each stuffed date into the melted chocolate, making sure it's fully coated. Let any extra chocolate drip off, then place them on a parchment-lined baking sheet.
  • While the chocolate is still wet, sprinkle a tiny pinch of flaky sea salt on top for that perfect sweet and salty balance.
  • Pop them in the freezer for 15-20 minutes until the chocolate is firm. Once set, store these delicious bites in an airtight container in the freezer or fridge.
