Chocolate Fruffles Brownie Truffle Fries

Ingredients
  

  • 2 large eggs
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 tbsp pure vanilla extract
  • 1/2 cup butter
  • 3 oz unsweetened baking chocolate, chopped
  • 1/2 cup all-purpose flour
  • 12 oz semi-sweet or dark chocolate, chopped
  • sea salt (optional) for sprinkling on top

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, beat the eggs and salt until frothy.
  • Mix in the sugar and continue beating for 2-3 minutes, then add vanilla and beat for another 30 seconds.
  • Melt the butter and unsweetened chocolate in the microwave for 1 minute, stirring well. If needed, microwave for an additional 15 seconds.
  • With the mixer running, gradually add the chocolate mixture to the egg mixture, then mix in the flour for 1 minute. Scrape the bowl and mix for another 30 seconds.
  • Line an 8x8 inch baking pan with foil or parchment and spray lightly with nonstick spray. Pour in the batter and bake for 15-20 minutes until the center is slightly undercooked. Let cool completely.
  • Once cooled, cut the brownies in half, then slice each half into 1/2 inch wide strips. Wrap in foil and chill in the refrigerator for at least 30 minutes.
  • Melt the semi-sweet or dark chocolate as per package instructions. Dip each brownie strip into the chocolate and place on a lined baking sheet. Sprinkle with sea salt and refrigerate to set. Serve cold.
