Equipment

  • Square baking pan

  • Hand Mixer

Ingredients

Brownie Base

  • 1 box brownie cake mix (18 oz) baked according to package instructions
  • 1/2 cup semi-sweet chocolate chips folded into the brownie batter

Mint Filling

  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tbsp light cream
  • 1/4 tsp pure mint extract use up to 1/2 tsp
  • 5 drops natural green food coloring optional

Topping

  • 1/3 cup dark or milk chocolate chips for drizzle

Instructions

  • Whip up your favorite brownie mix according to the package directions, folding in the chocolate chips for a rich antioxidant boost. Bake in a square pan and let it cool completely on a wire rack.
  • Create a lighter, fluffy mint layer by beating the softened butter with the powdered sugar. Gently stir in the mint extract and green food coloring, then add the cream half a tablespoon at a time until smooth and creamy.
  • Evenly spread the velvety mint frosting over your cooled brownie base. Pop the pan into the freezer for 2 hours to easily set the layers for clean, perfect cuts.
  • Melt the remaining chocolate chips in the microwave in short 15-second bursts. Artfully drizzle the warm chocolate glaze over the top, let it harden, slice into portions, and enjoy this refreshing sweet treat!
