Ingredients
  

  • 3 cups cooked quinoa
  • 1.5 cups dark chocolate chips
  • 1 tablespoon coconut oil
  • 3 tablespoons peanut butter or any nut/seed butter
  • 1 teaspoon flakey sea salt

Instructions
 

  • Preheat your oven to 450°F and line a baking sheet with parchment paper.
  • Toast the quinoa by spreading it evenly across the parchment paper. Bake for 20 to 30 minutes, stirring every 5 to 7 minutes, until golden and crispy. Let it cool completely.
  • Melt the dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  • Gently fold the crispy quinoa into the melted chocolate until evenly coated.
  • Spread the mixture into an even layer on the baking sheet. Drizzle with peanut butter and sprinkle with sea salt.
  • Freeze for at least 30 minutes to set. Break into pieces and store in the freezer.
