Chewy Chocolate Cookies

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg room temperature
  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Mint Frosting

  • 1 1/2 cups powdered icing sugar
  • 1 tbsp milk
  • 1/2-1 tsp mint extract to taste
  • green food coloring optional

Chocolate Ganache

  • 3/4 cup semisweet chocolate chips or chopped chocolate
  • 1 tbsp oil like canola

Instructions
 

  • Making the Chewy Chocolate Cookies:

  • Get Ready! Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper for easy cleanup.
  • Cream It Up! In a large bowl, beat the softened butter and granulated sugar together with an electric mixer until the mixture is light and smooth, about 3-4 minutes.
  • Add Wet Ingredients: Stir in the vanilla extract and the egg, mixing until everything is just combined.
  • Combine Dry Ingredients: Gently mix in the flour, cocoa powder, baking soda, and salt until a soft, cohesive dough forms. It should be easy to handle, maybe a little tacky but not too sticky.
  • Shape & Bake! Roll the dough into 16 uniform balls, each about 1¾ inches in size. Place them on your prepared baking sheets. Bake for 8-10 minutes, or until the edges look set and the center of the cookie is still slightly glossy.
  • Cool Down: Let the cookies cool on the baking sheets for 10 minutes, then transfer them to a wire rack to cool completely.
  • Whipping Up the Mint Frosting:

  • Frosting Fun! In a medium bowl, beat together the powdered icing sugar, softened butter, milk, mint extract, and a few drops of green food coloring (if you're using it for that festive pop!). Mix until the frosting is wonderfully smooth and creamy.
  • Frost the Cookies: Once your chocolate cookies are fully cooled, spread an even layer of the mint frosting over each one.

  • Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and oil. Heat in short 30-40 second bursts, stirring well after each interval, until the chocolate is fully melted and smooth.
  • Garnish & Serve! Carefully spoon the warm ganache over your chilled, frosted cookies. The cold cookies will help the ganache set quickly and beautifully. Serve immediately or let them sit at room temperature to thaw completely before enjoying.
