  • 1 pound fresh or frozen green beans thawed, ends trimmed and cut in half
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 1/4 cup diced onion
  • 8 ounces fresh mushrooms chopped
  • 1/2 cup all-purpose flour
  • 2 cups chicken stock
  • 1 1/2 cups whole milk (or heavy cream for a richer sauce)

  • 1/2 teaspoon black pepper
  • 2 teaspoons soy sauce
  • 1 cup crispy fried onions plus more for extra crunch, if you like!

Instructions
 

  • Preheat your oven to a cozy 375°F (190°C). Lightly coat a 9x13 inch baking dish with non-stick cooking spray, so nothing sticks!
  • Trim the ends of your green beans and cut them in half. Pop them into a medium, microwave-safe bowl with just 2 tablespoons of water. Cover it up (a plate works great!) and microwave for only 3 minutes until they're bright green and perfectly crisp-tender. Drain them well and set aside.
  • In a large skillet, melt the butter over medium heat. Toss in your diced onions and minced garlic. Cook, stirring often, for about 2-3 minutes until they smell amazing and turn a light golden color. This builds a fantastic flavor base!
  • Stir in the chopped mushrooms and continue cooking for another 4 minutes, stirring frequently, until they've softened and released their earthy flavors.
  • Sprinkle in the all-purpose flour and stir it until it's fully combined with the butter and veggies. Gradually whisk in the chicken stock, followed by 1 ½ cups of the whole milk (or heavy cream if you prefer a richer sauce). Season with salt, pepper, and soy sauce. Bring this mixture to a gentle boil, whisking consistently for 4-5 minutes until your sauce is wonderfully thick.
  • Take the thickened sauce off the heat and let it cool for about 5-7 minutes. Then, gently fold in your blanched green beans and the remaining ½ cup of milk. Stir everything together until the beans are beautifully coated.
  • Pour the delicious green bean mixture evenly into your prepared baking dish. Generously sprinkle the top with crispy fried onions and grated Parmesan cheese for that perfect golden crust.
  • Bake for 22-28 minutes, or until the casserole is bubbling around the edges and the topping is gloriously golden brown.
