Ingredients
  

Pork Roast

  • 3 pounds boneless pork butt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon oregano

Vegetables and Broth

  • 2 tablespoons olive oil
  • 0.5 sweet onion finely diced
  • 4 garlic cloves
  • 3 cups beef broth
  • 1.5 pounds mini gold potatoes
  • 3 large carrots chopped
  • 2 bay leaves
  • 1 tablespoon tapioca flour optional, for thickening

Instructions
 

  • First, gently rub your pork butt all over with garlic powder, black pepper, sea salt, onion powder, and oregano. Make sure it's nicely seasoned!
  • Next, press the Sauté button on your Instant Pot and add the olive oil. Once it's hot, carefully place the seasoned pork butt into the pot. Sear for about 4 minutes until it's golden brown, then flip and sear the other side for another 4 minutes.
  • After searing, take the pork out and set it on a plate. Add the finely diced sweet onion and garlic cloves to the pot, sautéing them for just 1 minute to soften. Then, press Cancel.
  • Now, pour in the beef broth, then carefully place the seared pork butt back into the pot. Arrange the mini gold potatoes, chopped carrots, and bay leaves around the pork. Secure the lid and make sure the top valve is set to Sealing.
  • Cook on High Pressure for 60 minutes (this is roughly 20 minutes for every pound of pork).
  • When the cooking timer finishes, don't touch the pot right away! Let the pressure naturally release for 15 minutes. After that, gently push the top valve to Venting to release any remaining pressure.
  • Carefully remove the tender pork and veggies from the pot. If you'd like a slightly thicker gravy, take out ¼ cup of the pot's juices and mix it with 1 tablespoon of tapioca flour until smooth. Stir this mixture back into the pot and warm it gently until it thickens a bit.
  • Finally, garnish your mouthwatering Instant Pot pork roast with fresh herbs and serve it warm for a truly comforting and healthy meal!
