Ingredients
  

Healthy Crust

  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons granulated low-carb sweetener (for crust)
  • 2 ounces cream cheese softened (for crust)
  • 3 tablespoons unsalted butter softened (for crust)
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon (for crust)

Creamy Filling

  • 8 ounces cream cheese softened (for filling)
  • 1 cup ricotta cheese or cottage cheese full-fat for low-carb
  • 2 large eggs
  • 1/4 cup heavy whipping cream
  • 1/4 cup granulated low-carb sweetener (for filling)

Cinnamon Swirl

  • 2 tablespoons granulated low-carb sweetener (for cinnamon swirl)
  • 1 teaspoon ground cinnamon (for cinnamon swirl)

Dreamy Icing

  • 2 ounces cream cheese softened (for icing)
  • 2 tablespoons powdered low-carb sweetener (for icing)
  • 1 tablespoon unsalted butter softened (for icing)

Instructions
 

  • Get your oven ready by preheating it to 350°F (175°C).
  • In a food processor, combine all crust ingredients: almond flour, coconut flour, 2 tbsp sweetener, 2 oz softened cream cheese, 3 tbsp softened butter, vanilla, and 1 tbsp cinnamon. Process for 1-2 minutes until a soft, uniform dough ball forms. Press this dough evenly into the bottom of an 8x8 inch baking dish.
  • Without washing the food processor, add all filling ingredients: 8 oz softened cream cheese, ricotta (or cottage cheese), eggs, heavy cream, and ¼ cup sweetener. Blend until completely smooth and wonderfully creamy. Carefully pour this delicious filling over your prepared crust.
  • In a small bowl, mix the 2 tbsp sweetener and 1 tsp cinnamon for the swirl. Drop small spoonfuls of this fragrant mixture over the cheesecake filling. Use a knife or a toothpick to gently swirl the cinnamon into the cheesecake for a beautiful, inviting design.
  • Bake in the preheated oven for 40-50 minutes, or until the center of the cheesecake is mostly set with just a slight wiggle. Let it cool down completely at room temperature, then chill in the refrigerator for at least 2 hours.
  • Once the cheesecake is fully cooled, stir together the icing ingredients: 2 oz softened cream cheese, powdered sweetener, and 1 tbsp softened butter until smooth and spreadable. You can drizzle this icing over the bars for a fancy touch (add a tiny bit of almond milk or cream to thin it if desired) or simply spread it evenly. Slice into bars and enjoy this wholesome treat!
