- 3 Large Eggs
- 2 Ounces Cream Cheese softened
- 1/8 teaspoon Baking powder
Preheat your oven to 300°F (150°C). Line a 13x9 inch baking sheet with parchment paper or a silicone baking mat.
Carefully separate the egg whites from the yolks. Place 2 egg yolks into a medium bowl with the softened cream cheese, and put all 3 egg whites into a separate medium bowl. You can save the remaining egg yolk for another recipe.
Sprinkle the baking powder evenly over the egg whites. Using a hand mixer or stand mixer, beat the egg whites until they are firm and form stiff peaks.
Next, in the bowl with the egg yolks and cream cheese, beat them with the hand mixer until the mixture is smooth and completely lump-free.
Gently fold one-third of your stiff egg whites into the egg yolk mixture. Once combined, add another third of the egg whites and fold them in. Finish by folding in the last of the egg whites. Make sure everything is just combined to keep that lovely airy texture!
Scoop the fluffy mixture into 6 equal rounds onto your prepared baking sheet.
Bake for about 25 minutes in the preheated oven, or until they turn a beautiful golden color. Remove from the oven and let them cool completely before enjoying.
