Coconut Overnight Oats

Ingredients
  

  • 1 cup old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 2/3 cup coconut cream
  • 2/3 cup coconut milk
  • 2 tablespoons cottage cheese
  • 1 teaspoon vanilla extract
  • 2 teaspoons honey optional
  • 1 tablespoon shredded coconut optional

Instructions
 

  • Combine oats and chia seeds in a large container.
  • Add coconut cream, milk, cottage cheese, vanilla, and honey; mix well.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Before serving, stir again and divide into jars or bowls.
  • Top with shredded coconut, fruit, or granola if desired.
