Coconut Toffee Chocolate Chip Cookie Bars

These bars are a delightful blend of sweet coconut and rich chocolate!

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 cups flaked coconut
  • 1/2 tsp salt
  • 3/4 cup brown sugar
  • 1 cup softened butter
  • 1 lightly beaten egg
  • 12 oz semi-sweet chocolate chips
  • 14 oz sweetened condensed milk
  • 1/4 cup Karo® Light Corn Syrup
  • 8 oz toffee bits

Instructions
 

  • Preheat your oven to 350°F.
  • In a large bowl, mix flour, oats, coconut, and brown sugar on low speed with an electric mixer.
  • Add the butter and mix until crumbly. Incorporate the egg and mix well, then stir in the chocolate chips.
  • Set aside 1-1/2 cups of this dough for topping. Press the remaining dough into a greased 13 x 9-inch baking dish and bake for 10 minutes.
  • In a small bowl, combine sweetened condensed milk and corn syrup until mixed. Pour this mixture over the hot crust and sprinkle with toffee bits.
  • Evenly distribute the reserved crust mixture on top. Bake for 25 to 30 minutes until golden brown. Allow to cool before cutting into bars.

Notes

Feel free to add nuts or other toppings as desired!
