1scoopPEScience Peanut Butter Cookie Protein Powder
1/3cupPB Fit powder
1/4cupwateryou might need a tiny bit more!
Chocolate Coating
5ouncesdark chocolate chipsabout 1 cup
1teaspooncoconut oil
Instructions
First, combine the PB Fit powder, protein powder, and water in a mixing bowl. Stir everything together really well until you get a thick, dough-like consistency.
Next, in a separate microwave-safe bowl, gently melt the dark chocolate chips and coconut oil. You can do this in the microwave by heating in 30-second bursts, stirring in between, or use a small saucepan on the stovetop until the mixture is completely smooth and glossy.
Grab a muffin tin and line it with paper muffin liners. Spoon about 1 teaspoon of the melted chocolate mixture into the bottom of each liner to create a base.
Now, take small scoops of your peanut butter filling and gently press them into the center of each chocolate-lined cup.
Pour the remaining melted chocolate evenly over the peanut butter layer in each cup, making sure it covers the top completely.
Pop the muffin tin into the freezer for at least 15 minutes. This will help your protein cups set quickly and perfectly.
Once firm, carefully remove the paper liners from your healthy protein peanut butter cups. Store them in an airtight container in the refrigerator or freezer for a refreshing, anytime treat!
