Cool Summer Protein Peanut Butter Cups ☀️

Ingredients
  

Peanut Butter Filling

  • 1 scoop PEScience Peanut Butter Cookie Protein Powder
  • 1/3 cup PB Fit powder
  • 1/4 cup water you might need a tiny bit more!

Chocolate Coating

  • 5 ounces dark chocolate chips about 1 cup
  • 1 teaspoon coconut oil

Instructions
 

  • First, combine the PB Fit powder, protein powder, and water in a mixing bowl. Stir everything together really well until you get a thick, dough-like consistency.
  • Next, in a separate microwave-safe bowl, gently melt the dark chocolate chips and coconut oil. You can do this in the microwave by heating in 30-second bursts, stirring in between, or use a small saucepan on the stovetop until the mixture is completely smooth and glossy.
  • Grab a muffin tin and line it with paper muffin liners. Spoon about 1 teaspoon of the melted chocolate mixture into the bottom of each liner to create a base.
  • Now, take small scoops of your peanut butter filling and gently press them into the center of each chocolate-lined cup.
  • Pour the remaining melted chocolate evenly over the peanut butter layer in each cup, making sure it covers the top completely.
  • Pop the muffin tin into the freezer for at least 15 minutes. This will help your protein cups set quickly and perfectly.
  • Once firm, carefully remove the paper liners from your healthy protein peanut butter cups. Store them in an airtight container in the refrigerator or freezer for a refreshing, anytime treat!
