Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in short bursts (30 seconds at a time), stirring thoroughly after each interval, until the chocolate is fully melted and wonderfully smooth.
Line a baking sheet with parchment paper. Arrange 6 graham cracker sheets on it. Using a spoon or spatula, spread an even, thin layer of the melted chocolate onto each cracker.
Pop the baking sheet into the freezer for about 10-15 minutes, or until the chocolate layer has set firm.
In a medium-sized bowl, gently combine the light Cool Whip and vanilla protein powder. Mix until the filling is completely smooth and all the protein powder is well incorporated.
Take the chocolate-covered graham crackers out of the freezer. Spoon a dollop of the creamy protein filling onto each chocolate-covered cracker. Gently place a plain graham cracker on top, pressing down lightly to create a sandwich.
For an extra touch, you can dip one edge or corner of each assembled s'more into any remaining melted chocolate.
Return the assembled s'mores to the parchment-lined baking sheet and place them back in the freezer for at least 1 hour, or until they are completely firm.
Remove from the freezer and enjoy these refreshing, protein-packed treats immediately!
